[. . . ] Optimal Brewing Tea varieties are grown and produced in different environments and require specific water temperatures to allow their unique flavor and aroma to develop during brewing. To bring out the optimal quality and taste of more delicate tea leaves, a lower temperature will produce a better flavored cup of tea. For example, steeping green, white or oolong teas in boiling water may scald the tea leaves and result in a bitter, astringent brew. Brewing the tea for too long may also result in a bitter, unpleasant taste, while brewing for too short a period may leave the tea bland. for best results always follow the specific directions on the tea/coffee packet. To bring out the optimal taste and quality of your favorite tea or coffee, we recommend that you use your Breville Variable Temperature KettleTM at the suggested temperature for your selected tea or coffee. To activate the HOLD TEMP function, first press the desired water temperature button from the five options on the control panel. Then press the HOLD TEMP button, followed by the START/ CANCEL button to commence heating the water. Alternatively, the HOLD TEMP button can be activated at any time during the heating cycle and/or within one minute after the heating cycle has completed. If the kettle is removed from the power base during the HOLD TEMP function the kettle will automatically switch off. The Variable Temperature Control Table on Page 12 provides a guide to a range of tea and coffee varieties and the recommended temperature to select on the control panel of the Variable Temperature KettleTM. NOTE: This table is a recommended guideline only and may vary depending on preference, brand and age of tea/coffee used. Experiment with your favorite tea/coffee and adjust the temperatures and times to suit personal taste. Before First Use Remove and safely discard any packaging material or promotional labels attached to your kettle. It is recommended that before first use to fill the kettle to the maximum level with cold tap water, bring to the boil by selecting the BOIL 212° button, then discard the water. Your kettle will only operate when positioned on the power base. To fill the kettle, remove the kettle from the power base and open the lid by pressing the lid release button. Always fill the kettle between the minimum (500) and maximum (MAX 1800) marks on the water window. Too little water will result in the kettle switching off before the water has boiled or reached the selected temperature. Ensure the lid is closed and locked firmly into place. Position the kettle securely onto the power base. Insert the power plug into a 110/120V power outlet.
