Turn frozen foods over or separate the pieces, if possible, during defrosting and standing times. 8) "Standing time" is the term used to indicate the time that food should be left to stand after the recommended cooking time. This allows the heat to continue spreading evenly within the food. The temperature of meat, for example, will increase by about 5 8 °C during standing times. Dishes need not be left in the oven for standing times.
