The microwave energy heats the outer surface of the food and this heat is moved slowly to the center. In addition to defrosting, this defrosting setting can also be used for slower and gentler cooking. Soups stews, and some sauces can be cooked "Defrost" to blend flavors and tenderize meat. Foods with a high-milk, cheese or egg content may be cooked on the DEFROST setting to prevent curdling or toughness. Place food in the microwave oven and close the door.
