Cooking more food? If you want to cook more food right away, wipe the underside of the lid with kitchen paper, so that it soaks up any condensation. This water must be removed before the lid is replaced again, as water falling into the hot oil will make it spit, possibly ejecting hot oil. Getting the best from your fryer Oil · Always ensure that you use a good quality oil for deep frying. Alternatively use corn, groundnut or rapeseed oil. Avoid mixing oils of different types and quality. · Avoid mixing oils of different qualities. · Solid fat (lard) and solid oil can be used, this should first be melted in a pan until softened, then carefully transferred into the fryer bowl. · Change the oil when it becomes brown or cloudy in colour.
