Warm up the plates and serve the sauces while they are still very hot. After braising, switch the temperature selector back to 70 ºC. Small pieces of meat can be kept warm for up to 45 minutes, and large pieces for up to two hours. Defrosting Remove the food from its packaging and place it in a suitable dish on the wire grill.
