Preparation · Wrap food in aluminium foil or freezer quality polythene bags. · Wrap fish and offal in polythene bags. · Wrap food which has a strong odour or can dry out, in polythene bags, aluminium foil, or place in airtight containers. · Make sure all air is excluded from foil wrapping or bags. · Do not leave frozen food at room temperature to thaw; the best way to defrost food is to put it in the fridge to thaw slowly.
