Combine minced beef, potato, onion, curry powder and water in a saucepan and cook over moderate heat for 6-8 minutes or until potato is cooked and soft. Heat oil in a saucepan, add bacon and onion, cook over medium heat for 2 minutes add stock, mushrooms and parsley and cook for 2-3 minutes.
