I EXPRESSBAKE SETTING EXPRESSBAKE RECIPES SETTING RECIPES (58 MINUTES) For the 58 minute E X P R E S S B A K E cycle you can expect the following things to happen as the timer counts down to zero: At 0:58 - The dough is kneaded. (IO minutes) At 0:48 - The dough begins to rise. (13 minutes) At 0:35 - The dough begins to bake. (35 minutes) At 0:OO - The. bread EXPRESSBAKE is finished. SETTING RECIPES (80 MINUTES) For the 80 minute EXPRESSBAKE cycle you can expect the following things to happen as the timer counts down to zero: At 1:20 - The dough is kneaded. (20 minutes) At 1:00 - The dough begins to rise. (18 minutes) A t 0:42 - The bread begins to bake. (42 minutes) At 0:OO - The bread is finished. NOTE: Egg has been added to the EXPRESSBAKE setting recipes to give a better volume, but if you prefer, you may substitute 1/2cup water for 1 egg. Measure and add liquid ingredients to the bread pan. Measure and add dry ingredients (except yeast) to the bread pan. Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour it into the well. Snap the baking pan into the breadmaker and close the lid. Press "Select" button to choose the EXPRESSBAKE setting 58 or 80 min. Press the~"Start/Stop" button. EXPRESSBAKE S ETTING 1 FRENCH BREAD (NOT FOR TIMER) 2 LB. 4 cups 4 tsp. (Use EXPRESSBAKE Setting 58 Min or 80 Min) Hot water 11 - 2 " 51 5F (46-68°C) Large Egg Butter or margarine Salt Sugar All-purpose/Bread Machine flour Quick-rise yeast 3; IMPORTANT: Carefully measure the hot water and make sure it is between 115" and 125°F or 45" and 68°C by using a cooking thermometer.
